Broccoli Cauliflower Supreme

About the Pain-in-the-Ass Rating Scale
Each Lazy Chef recipe’s ease-of-preparation is rated on a 5-point scale that indicates how much of a pain in the ass it is to make. Pick something with 1 thumbtack and you’ll be in and out of the kitchen in no time. Select a 5-thumbtack dish and you better not be in a hurry.
Ingredients

8 oz cream cheese, cubed
½ cup ranch dressing
2 tbs Dijon mustard
1 lb cauliflower florets, cooked and drained
2 lbs broccoli florets, cooked and drained
1 cup crushed Ritz crackers

Directions
Place cream cheese, dressing, and mustard in medium microwaveable bowl. Microwave on high 30-45 seconds, or until cream cheese is softened and mixture is hot. Stir until well blended.
Toss hot cooked cauliflower and broccoli with hot cream cheese mixture.
Spoon into serving dish. Sprinkle with crushed crackers.

Hidden Valley Ranch Potato Salad

Serves 6-8

Ingredients

2.5 lbs red potatoes
1 lb. bacon
1 cup prepared Hidden Valley Ranch Salad dressing
Paprika
Chives
½ cup sliced green onions
Directions
​
Cut potatoes into 1-inch cubes, then boil on stovetop for about 20 minutes. Check them periodically with a fork prick to make sure they’re not getting too soft. Drain, then run under cold water in a colander to stop cooking.
Cook bacon in microwave until it’s crisp. Once it cools, crumble. While it cooks, dice onions.
In large bowl, combine potatoes, salad dressing, bacon, and onions. Toss gently. Dust with paprika and chives.
Best served warm or at room temperature.
