Pasta Presto


Serves 6
Ingredients

3 tbsp butter
8 oz. precooked ham slice, diced into cubes
½ cup frozen peas, rinsed in warm water to thaw
1 lb tricolor rotini
½ cup grated Parmesan cheese
1 pint heavy cream
​Directions

Prepare pasta according to package directions.

In large skillet, melt about 3 tbsp. butter or as much as needed to coat bottom.

Add ham and peas; sauté 2 minutes.

Add heavy cream and simmer 3 minutes more.

Toss cooked pasta with the sauce and Parmesan cheese. Serve.

Hint: If your mom sends you home with ham leftovers from a holiday meal, this recipe is a great way to use it up.

Ingredients

4 boneless, skinless chicken breast halves
¾ cup crushed potato chips
1/3 cup grated parmesan cheese
½ cup milk
¼ tsp black pepper
4 tbs butter, melted
Directions

Preheat oven to 375º.
Combine chips, cheese, and black pepper in a bowl. Pour milk into another shallow bowl.
Dip chicken pieces first in the milk, then in the potato chip mixture. Press crumbs against chicken to coat evenly on all sides.
Arrange chicken in a non-stick baking pan. Drizzle with butter. Bake about 20 to 30 minutes, depending on thickness.

Woodland Dinner

Serves 4
Ingredients

1 7.25 oz box Kraft macaroni and cheese
Milk
Butter
1 3 oz package of dried beef
1 4 oz mushrooms
6 oz sour cream
Directions

Prepare macaroni and cheese according to package directions.
While macaroni cooks, shred dried beef.
When macaroni and cheese is done, stir in beef, mushrooms, and sour cream.
Chili

Ingredients

2 lbs ground beef
2 cups ketchup
2 28-oz cans crushed tomatoes (Tuttorosso)
1 15.5-oz can dark red kidney beans
1 15.5-oz can light red kidney beans
1 32-oz can baked beans (Bush's)
½ cup sugar
Chili powder

Serves 6-8
Directions

Brown ground beef in frying pan. Drain.

In large pot, add all other ingredients. Add drained meat to pot. Add chili powder to taste.
Cook slowly for at least 1 hour; let set to thicken before serving. Sprinkle additional chili powder if desired.
Freezes well if you have leftovers.

Ingredients

1½ cups Wishbone Italian dressing
2/3 cup soy sauce
1 lb. boneless, skinless chicken breasts
1 lb. stir-fry steak or chipped steak or flank steak
16 flour tortillas
Lettuce
Tomato
Peppers (optional)
Onions (optional)
8 oz. shredded cheddar cheese
Ranch dressing
Directions

Trim fat from chicken and cut into bite-sized pieces. Cut steak into bite-sized pieces if necessary. Cut peppers and onions into pieces. Place chicken, steak, peppers, and onions in baking dish.
Mix Wishbone Italian dressing and soy sauce together. Pour over meat, peppers, and onions. Let marinate for at least 1 hour or overnight if possible.
Place meat mixture into deep skillet and cook on medium-high heat for about 10 minutes or until cooked through.
While meat cooks, dice tomato and shred lettuce.
Warm tortillas in microwave under a damp paper towel for 90 seconds.
Serve all ingredients buffet style and let each guest assemble a fajita combination that is to their liking.
